Smoky Split pea soup

IMG_7947Dried split peas are cheap and a great store cupboard staple.

You can get green split peas but my favourites here are the yellow ones.

No soaking needed.

If you have any smoked bbq left over its ideal. If not a good smoked sausage is good.

Polish hunters sausage is excellent, chorizo is a bit too much.

Ingredients

Finely chopped onion

1 clove garlic

Whole smoked sausage

2 cups of split peas

(Smoked ribs/pork)

Method:

Soften the onions and garlic, add the split peas and 2x pints of water.

Add the sausage and meat. Throw in a bay leaf or two.

Boil then simmer. Careful it doesn’t catch and burn.

Cook until soft and creamy. Season well.

Serve creatively – chopped chives, spring onions, cracked pepper, bbq dry rub, paprika, chilli…
