Sardinerie Hyacinth Parmentier Sardines – Olive oil and chilli

These are from the French Sardinerie Parmentier which originated in Douarnenez in the French department of Finistère, Brittany, northwestern France at the end of the 19th century. The factory was founded on April 28, 1879 and the Hyacinthe Parmentier brand is named after its founder.

The sardines from the open waters of the Atlantic are steamed in olive oil and chilli.

The tin is well branded with the distinctive yellow and branding. The Piment (chilli) tins have red and a chilli picture (other flavours exist).

The sardines are big and succulent. Heads and tails removed but otherwise whole.

Size is pretty consistent.

The texture is soft and whilst the fish can be lifted whole gentleness is required.

The packing oil is clear with little water/juice. Within the oil is a thin walled pepper, a slice of pickle and a lemon slice.

The fish have a lovely texture and succulence, the oily fish flavour not overwhelming but strong.

There is a kick of heat but well balanced. The lemon is almost confit and is fully edible and delicious.

Overall these are one of my favourite tins of sardines. Lovely full rich classic flavour and texture. Better than many others out there.

9/10 – excellent on their own but versatile to go with a sale, on bread/toast, pasta etc.

Excellent value at around £2.25 a tin. (2024 Uk).
